I have actually the same problem, I got 100 template-emails from Pinterest that I am not good enough, I already did some small and big changes on my website with products, policies... I wrote many emails to re-check my website with catalog, policies and... but I only get emails that I am not good enough, the most interesting thing is that I was verified merchant for 2 years, everything was fine and I did not make any big changes on my web-site, and one day I just got email that I am not good enough for Pinterest and it has started, I asked someone to speak with me, no one cares, is there any support from Pinterest Customer Support Team, I really got the same email many many times doesn't matter what I wrote or made with my website... Very sad, I expected more...

The essence is much deeper, for all the time, did someone get back his verified merchant status? I suspect pinterest support team is just pretending to help, support and I guess work in general, cause I write to the support team every day for 3 weeks and have never communicated with a person yet, how is this allowed?

I know they have been exceptionally busy and are doing their best to reply to everyone.
Trust me when I tell you they work very hard to try and assist everyone. Also, during the last three weeks, there have been two major legal holidays, so it's very likely that people were not available during that time.

So do you know any store owners who got back their verified merchant status? I guess Pinterest takes this status for statistics, because someone have to lose his status, logically, if the store works fine for 2 years, what is the reason to take his verified merchant status?
To answer your question, yes, I know several merchants who have gotten their status back.
If Pinterest has changed its guidelines or something has changed on the merchant side, it can create an issue. Unfortunately, there is no way to be certain about the issue; that is entirely up to Pinterest.
I noticed on your site that there are a number of photos that do go against the Verified Merchant Guidelines - perhaps if you changed those photos, the status might change - there is a specific photo on your main page that would definitely be flagged by Pinterest.
